The chicken club is a sandwich that lives or dies by its execution. Mostly it's about the bacon being crispy at the same time the chicken is hot and the avocado is fresh. Timing.
The chicken is brined (same as the caesar) then grilled to order — sliced thick across the grain. Applewood bacon comes from the breakfast platter prep, baked crisp on a rack. Avocado is fresh, sliced thin, fanned.
The herbed mayo is the binder — house mayo with chopped dill, parsley, chives, lemon juice, a little garlic. We spread it on every slice.
It's a proper three-stack: bread, chicken, bacon, avocado, mayo; bread, lettuce, tomato, mayo; bread on top. Cut into quarters with toothpicks.
$16. The lunch order to make when you want something substantial without being heavy.
