Sometimes the answer is just Nutella. We don't apologise for it.

The trick is warming the Nutella properly. We hold a small portion in a bain-marie at exactly the right temperature — warm enough to drizzle, cool enough to still taste like Nutella and not melted chocolate. Cold Nutella doesn't spread well. Hot Nutella loses the cocoa-hazelnut snap.

Fresh strawberries get sliced thick and arranged between the pancake layers — a little tartness to balance the sweet. Hazelnuts come toasted, chopped roughly, scattered on top for crunch.

The whipped cream is soft — barely whipped — vanilla, no sugar (the Nutella has plenty). A final drizzle of warm Nutella across the top and we send it out.
