The quinoa bowl is the dish for the day when you want something hot, substantial, and not heavy. Lunch in one bowl, with a proper backbone of grain and protein.
The quinoa is tri-colour (white, red, black), rinsed well before cooking — that step removes the saponin coating that makes some quinoa taste soapy — then simmered in vegetable stock until the grains pop. Fluffed and seasoned with olive oil and salt.
Sweet potato gets cubed and roasted with smoked paprika and cumin until the edges are dark and the inside is creamy. Red onion goes on the same tray, charred at the edges. Chickpeas get tossed in oil and crisped in the oven until they crackle.
All of it goes over the warm quinoa with crumbled feta, fresh parsley, dill, and a lemon-shallot vinaigrette. A pinch of Aleppo pepper at the end if you want a little heat — just ask.
