Brunch is a strange word. It's not breakfast and it's not lunch and it doesn't really care about the time on the clock. What it is, at its best, is an excuse to sit with someone for two hours on a weekday morning without feeling guilty about it.

We cook by three small rules.

Time, generously. A batter rises on its own clock. A latte deserves to be poured properly. Bread bakes on the morning, not the day before. We won't rush you and we'd appreciate not being rushed.

Real, always. Real maple syrup. Real butter. Real cream. Eggs that came from chickens this week. We source from local growers and roasters when we can, and we'd rather change the menu than the ingredients.

The table comes first. The second pot of coffee is on us. Linger as long as you want. Some of our best customers have come in for breakfast and left after lunch — and that's exactly the point.

That's the manifesto. The rest is just pancakes.
